Abstract: Research areas concerning unconventional dietary fiber sources (shellfish, tobacco, wood lignin, wheat straw, legumes, fruits, and vegetables) are reported by experts for nutritionists, physiologists, cereal chemists, microbiologists, chemists, and health care professionals. Most of the areas covered contain in-depth discussions on the effect of a particular dietary fiber on human or animal gastrointestinal function, beneficial and deleterious effects of the fiber, and (where possible) mechanisms of these effects. Recent evidence indicates that consumption of unconventional sources of dietary fiber including brussel sprouts, broccoli, and cabbage may prevent the early stages of colon cancer. (wz)
